APPLE PIE con mele annurche
Le Mele annurche sono una specialità di mele saporite profumate e che io adoro usare per conserve e dolci sostituendole anche nelle ricette tradizionali come strudel o Apple pie in questo caso, così da rendere la ricetta più vicina ai miei gusti e alla mia terra.
Le mele annurche IGP sono mele tipiche Campane (dei Campi Flegrei per la precisione) ricche di virtù salutari, altamente nutritive per l’alto contenuto in vitamine e minerali e fibre e soprattutto come ripeto sono davvero squisite. Per saperne di più —> Consorzio di tutela Melannurca campana IGP

Ingredienti
Per la pasta brisée
400 gr farina 00
50 gr zucchero
1 cucchiaino da caffè di sale
200 gr di burro freddo
120 gr di acqua (o quanto ne assorbe)
Per il ripieno di mele
1,5 kg di mele annurche
100 gr di zucchero di canna integrale
1 cucchiaino da te di cannella
1 limone, il succo
30 gr di burro
1 uovo per spennellare
Procedimento
1) In un frullatore con le lame, o nella planetaria con il gancio a foglia, versare la farina, il sale, lo zucchero, il burro freddo e l’acqua. Frullate a più riprese, fino a ottenere un impasto amalgamato(non lavorare troppo, al massimo 60 secondi). Formate una palla, chiudetela nella pellicola e lasciatela riposare in frigorifero per un’ora.
2) Preparate il ripieno di mele. Sbucciate e tagliate a fette le mele, ponetele in un tegame basso capiente su fuoco basso, aggiungete il burro, lo zucchero, la cannella ed il limone. Fate caramellare le mele per una decina di minuti, lo zucchero si scioglierà con il succo delle mele, il limone ed il burro caramellando le fette. A questo punto eliminate le mele dal tegame ponendole in un piatto, lasciando cuocere ancora il succo fino ad ottenere un caramello abbastanza denso. Far intiepidire il tutto.
3) Stendete metà della pasta brisée su di una base infarinata, in modo da ottenere un cerchio di 30 cm ca, che possa ricoprire la dimensioni della tortiera scelta (26 cm) e di uno spessore di circa 5 mm. Aiutandovi con un mattarello, arrotolando la pasta e adagiandola poi nella tortiera, premere bene sui bordi, tagliando il bordo in eccesso. Riponete nel frattempo il resto dell’impasto in frigorifero.
4) Versate le mele cotte nella tortiera, spingendole verso il centro per creare una piccola cupola e versarvi sopra lo sciroppo caramellato. Ponete la tortiera in freezer mentre preparate il disco per ricoprire la torta.
5) Stendete la restante pasta brisée su di una base infarinata, anche questa di uno spessore di circa 5 mm. Aiutandovi di nuovo con un mattarello adagiate la pasta sulla torta e premete bene sui bordi in modo che si uniscano bene, e dategli, quindi, la tipica forma dell’apple pie pizzicando con la punta delle dita la pasta in modo da sigillarne bene i bordi, tagliando la pasta in eccesso. Con un coltello a lama liscia fate dei tagli di circa 4 cm poco distanti dal centro, a raggiera, che serviranno a far uscire il vapore che si formerà all’interno della torta.
6) spennellate la torta con un uovo sbattuto e infornate in forno ventilato a 180° (gas livello 4), per 20 minuti e poi a 150° (gas livello 2,5) per 20 minuti. A metà cottura spennellate nuovamente la torta spolverizzandola anche con dello zucchero di canna grezzo.
7) Quando l’Apple Pie sarà pronta e avrà preso colore, spegnete e lasciate raffreddare in forno. Quindi sfornatela e servite l’Apple Pie direttamente nella tortiera.

Apple pie (with “aanurche” apples)

Ingredients:
Pie Crust:
400 grams all-purpose flour
50 grams granulated white sugar
1 teaspoon salt
200 grams butter, chilled
120 ml ice water
Apple Filling:
1,5 kg “annurche” apples (typical apples of south Italy) peeled, cored, and sliced 1/4 inch thick
100 grams granulated brown sugar
lemon juice 1 lemon
1 teaspoon ground cinnamon
30 grams butter
1 egg yolk for the glaze
Preparation
1) Pie Crust
In a food processor, place the flour, salt, sugar and the butter and process until the mixture resembles coarse meal (about 15 seconds). Pour 1/4 cup (60 ml) water in a slow, steady stream, through the feed tube until the dough just holds together when pinched. If necessary, add more water. Do not process more than 30 seconds.
Turn the dough onto your work surface and gather into a ball. Divide the dough in half, flattening each half into a disk, cover with plastic wrap, and refrigerate for about one hour before using. This will chill the butter and relax the gluten in the flour.
2) Apple Filling
Place apples, lemon juice, sugar, cinnamon and butter in a large pan, and boil over medium high heat until the liquid has reduced for about 10 minutes.
Remove apples and let cook the liquid until it is syrupy and lightly caramelized.
3) After the dough has chilled sufficiently, remove one portion of the dough from the fridge and place it on a lightly floured surface. Roll the pastry into 30 cm circle. Fold the dough in half and gently transfer 24 cm pie pan. trim the edges of the pastry to fit the pie pan. Fill with apple mixture, gently packing apples and mounding slightly in center; pour over the caramelized syrup on the apples.
4) Remove the other part of the dough from the fridge and flat it into a disk. Lay over apples; press along moistened rim to seal. With floured fingers, fold overhang under itself to form a thick rim; pinch between thumb and forefinger to form a uniform edge around the rim of the pie plate. With a floured paring knife, cut 5 to 6 slits in top of pie, radiating from center to allow the steam to escape;
5) Lightly beat together the egg yolk and cream for the glaze. Brush the top of the apple pie with the egg glaze and brown sugar. Bake 20 minutes at 180° degrees in fan oven, reduce heat to 150° degrees and bake until crust is golden 20 minutes more. If edges brown too quickly, cover with aluminum foil. Cool before serving.
